It’s something to do with turbidity, when you water the plants the leaves become turbid and stiff and stay erect but when you don’t water them they lose their turbidity and droop down. OP probably waters them only once a day so the the other half of the day when they are not watered the leaves become droopy.
Why do the leaves do that?
